Ingredients: 125g unsalted butter; 300g dark muscovado sugar; 2 medium eggs; 100ml milk; 250g plain flour; 1 tbsp ground ginger; 1 tsp bicarbonate of soda; 100g stem ginger, finely chopped; 2 tbsp stem ginger syrup

Ingredients

125g Unsalted butter
300g Dark muscovado sugar
2 Medium eggs
100ml Milk
250g Plain flour
1 tbsp Ground ginger
1 tsp Bicarbonate of soda (level)
100g Stem ginger, finely chopped
2 tbsp Stem ginger syrup (from the jar)

Method

Line 900g loaf tin with baking parchment.
Put and in large pan and melt over low heat, stirring; remove from heat and mix in and .
Sift , and directly into pan; add and and stir well.
Pour mixture into prepared tin and bake for 1 hour until skewer inserted in middle comes out clean; cool cake in tin for 5 minutes then turn out onto wire rack.
