Method

  1. In a medium bowl, combine the with the , , , , , , , , and . Cover and set aside, or ideally refrigerate up to overnight. Bring back to room temperature before using.
  2. Thoroughly wash the and leave it to soak in water.
  3. Heat a large, heavy-bottomed pan over a high heat. Add the , and and sauté until golden, 15–20 minutes. Deglaze the pan with 60ml water.
  4. Once the water has cooked off, add the whole spices (, , , , , , and ), the and , and sauté for 2 minutes more.
  5. Add the chicken with its marinade and sauté until it changes colour, 2–3 minutes. Add the , and and stir to coat.
  6. Add 120ml water (it should come about a third of the way up the chicken) and bring to a gentle boil. Turn down to a gentle simmer, cover and cook for 30 minutes, stirring halfway.
  7. Meanwhile, bring 1.75 litres of water to the boil in a medium pot. Add the , and and stir. Drain the soaked rice and add it, stir, and bring back to the boil.
  8. Boil for 5 minutes (no more than 5½), until the rice is just cooked but still has a bite. It shouldn’t go mushy when pressed between your fingers. Drain and set aside.
  9. Uncover the chicken, raise the heat to medium-high and cook off any excess water for 2–3 minutes. Add the , and (if you want more heat). The oil will have separated from the masala.
  10. Turn off the heat and stir in the and .
  11. Lightly oil the bottom of a casserole or stockpot if needed. Layer half the rice and sprinkle over half the . Add all the chicken, top with the remaining rice and sprinkle over the rest of the chaat masala.
  12. Mix the into the and drizzle it over with the . Scatter over the and and arrange the slices on top.
  13. If your pan isn’t heavy-bottomed, sit it on a heat diffuser or flat griddle. Wrap the lid in a tea towel (or foil) and seal tightly to keep the steam in.
  14. Heat on medium for 4–5 minutes until you can feel steam escaping at the sides, then turn to the lowest heat and steam (‘dum’) for 20 minutes.
  15. Turn off the heat and rest, lid on, for 10 minutes. Don’t stir. Gently lift onto a platter with a rice paddle and serve hot with or yogurt.

Notes

  • Rice: boil for 5 minutes for aged rice, 4 for newer rice. It should be just edible but not fully cooked, or it will break during steaming.
  • Steaming in the oven: heat the oven to 93°C. Layer the biryani in a lightly oiled, deep ovenproof casserole, seal tightly with a lid and/or foil, and bake for about 1 hour 30 minutes. In a rush, bake at 150–160°C for 30 minutes.
  • Cover pans when bringing water to the boil so it boils faster.
